Several of the missionaries have made me promise to send these recipes to moms at home, so here you go! These are some of my very favorites. I hope you and your families enjoy them too!
Santa Fe Egg Casserole
10-12 Eggs (beaten) (or Eggbeaters)
1/4 c. Butter
1 lb. grated Cheese (reserve some for the top)
1 pint Cottage Cheese
1/2 c. Flour
1 tsp. Baking Powder
1/2 tsp. Mrs. Dash or seasoned salt
Add, fold in:
2 4-oz cans chopped green Chilies
1 4-oz can sliced Olives
1 cup Chopped Ham (I love the Costco ham steaks)
Pour into a greased 9×13″ pan
Bake at 350 degrees for 40-45 minutes (until center doesn’t jiggle)
Serve with Salsa, Sour Cream, Avocados
This can easily be mixed up the night before, then popped into the oven first thing in the morning.
1 3/4 c. milk
½ c. melted butter
2 c. flour
4 tsp. baking powder
½ tsp salt
1 T sugar
In a large bowl, beat the eggs.
Add the rest, beat until smooth.
Cook on Belgian waffle iron.
Do not stir the batter between bakings.
Makes 6-9 round waffles.
3 c. sugar
1 ½ c. light corn syrup
3/4 c. water
½ to 3/4 tsp. cinnamon
Bring to a boil over medium heat, stirring constantly.
Cook and stir 1 minute.
Cool 5 minutes then add:
1 ½ c. evaporated milk
Serve warm, refrigerate leftover.
To reheat, warm slowly.
Makes about 3+ cups.
