Beef Cury and Rice

For one crock pot full:

One package of Costco stew meat (it’s fabulous, lean and tender)

Buy enough boxes of curry for the amount of meat you’re cooking.  I used 3 small boxes for this crock pot.  (If you find the larger boxes, check the amounts.)  The curry is found by Asian foods in the grocery store.  It comes in Mild, Medium Hot and Hot.  I like the mild or medium hot.

You can start this in the morning for dinner at night, or start it the night before and let it cook through the night.

To prepare the night before, throw the meat and a couple of large chopped onions in the crock pot. Cook the meat a few hours on high.  2016-8-31 (5)

Add the curry with the water it calls for.  The curry pouches will dissolve and make the delicious sauce.

Add chopped carrots and potatoes, as much as you like (the carrots below were for 2 crockpots full).

Let it cook on low through the night.  Your house will smell so good, you won’t sleep.

Keep it on low the next morning until you’re ready to eat.  If the sauce seems too thin, you can thicken it a bit with cornstarch.  Usually it’s fine.

You can do the same with chicken meat.

Serve over rice.  YUM.2016-9-1 MLC (120)I served this with iceberg lettuce wedges topped with feta, chopped tomatoes, bacon bits and bleu cheese or ranch dressing.
