Apple Bread

2017-3-8 Transfer Planning (7)We couldn’t stop eating this apple bread today.  It’s a winner.  We are still eating the apples I picked in November.  They’ve stayed crisp and good in our cold garage.  You’ll want to try this one.


4 cups peeled and chopped apples
1 1/2 cups sugar
2 eggs, well-beaten
1 cup vegetable oil
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1/2 cup raisins
1/2 cup chopped nuts

Beat eggs well, add sugar gradually.  Add oil and vanilla and beat well.  Sift dry ingredients and fold into the above mixture with the apples, raisins and nuts.  Mix thoroughly.  Pour into greased loaf pans.  Bake at 350 for 60 minutes.  Makes two 8 x 4 x 2 1/2″ loaf pans.
