Tonight we prepared for MLC tomorrow. MLC meals are some of my favorite to prepare. Imagine serving 35 hungry missionaries who love food! It’s pretty fun. Tomorrow we’re having Fajitas. Here is the very easy recipe:
1 lb sliced chicken tenders (uncooked)
1 each–red, yellow, green peppers
1 packet of Fajita seasoning
1 can of stewed tomatoes
Toss all together in 9×13 pan
Bake 350 for about 30 min.
Serve with warm tortillas, sour cream, cilantro, salsa, cheese, etc.
To serve a larger crowd, I put about 2-3 lbs of chicken in each 9×13 dish, with a very large onion, and 3 large colorful peppers. (I wish I had green peppers too.) I sprinkled 2-3 packets of Fajita seasoning in each and used one large can of tomatoes in each pan. I also added a can of chopped green chilies to each pan. It took about twice as long to bake this amount, but all 3 pans baked at the same time. This easily fed 35 big eaters.
