Here are 2 favorite side dishes we like to serve in the Mission Home. Both are simple, but delicious, and you might not think to make them if I don’t remind you here!
Cube potatoes (russet, red or golden)
Toss with a bit of olive oil and a good sprinkle of dry Ranch Seasoning
Salt and Pepper
Lightly oil a cookie sheet, and spread the potatoes on it
Bake at 350 degrees, 30-45 min, or until the potatoes are tender or crispy
You can add other vegetables to this if you like (carrots, zucchini, peppers, mushrooms, etc.)
Slice carrots on a slight angle, steam until just right (not too soft).
Melt a bit of butter mixed with brown sugar with a sprinkle of salt and drizzle over the carrots. Garnish with some finely chopped parsley if you like.
