This evening we had dinner with our dear friends, Toni and Arnold McBean. These are two phenomenal people. Toni is the reason we have Days for Girls happening here in the mission. She came to Orem when they learned I was coming here 3 years ago so she could learn about this humanitarian effort. She never looked back. Now we have a wonderful smoothly running organization here in Yakima and also in other areas around us.
She and Arnold were also our first housing coordinators as we got this mission up and running. They helped us set up and furnish dozens of new apartments throughout the mission. Then they traveled around doing inspections as they cheered on the missionaries. They are Wonderful Friends.
We had a lovely evening and a delicious lasagna meal. Toni is one good cook! The meal was topped off by Toni’s famous lemon cream pie. You are seriously going to want this recipe:
Lemon Cream Pie
1 c. sugar with 3 T cornstarch
½ stick butter
1 T grated lemon zest
1/4 c. lemon juice
3 beaten egg yolks
1 c. milk
Mix together, cook until thickened.
Add 1 c. sour cream
Chill at least 2 hours.
Put into a baked crust.
Oil Pie Crust
1/3 c. oil
2 T cold water
Measure exactly, mix thoroughly
1 c. + 2 T flour
½ tsp salt
Add to mixture.
Roll out between wax paper and lay in pan.
Bake 425 for 12-15 min.
Look what came home with us!! I am SO HAPPY! She also gave us a walnut pie, one of our favorites. We are so grateful for these dear friends.
